Sauvignon Blanc is an aromatic white grape variety, usually displaying strong aromas of gooseberry, elderflower, green pepper and asparagus. Most wines have no oak flavours and do not benefit from bottle age.
Wines made from Sauvignon Blanc are usually dry, medium bodied and have a high acidity (the latter characteristic also makes the grape suitable for sweet wine blends such as Sauternes):
Loire whites have aromas of gooseberry, grass, blackcurrant leaf and nettle and often display a steely character that is similar to Chablis.
Marlborough in New Zealand is new classic region for very expressive Sauvignon Blanc wines which are dry, with high acidity and medium body and characterised by flavours of passion fruit, gooseberry, green pepper and blackcurrant leaf. These wines are best consumed young. South African Sauvignon Blancs are usually made in a similar style but are lighter in body.
Chile is another source of premium Sauvignon Blanc - the wines have aromas of citrus, green apple and grass.
Apaltagua Costero is pale gold in colour, with fine bubbles. On the nose it is clean with marked notes of white fruits, such as green and yellow apples. Clear notes of crusty bread and hazelnuts mix with a delicate hint of buttery aromas. In the mouth it is creamy with subtle flavours of green fruit and dry fruits and a long and lingering finish.
The Gran Verano Sauvignon Blanc has a bright yellow tint with glints of green. Its prominent aromas of lime blend harmoniously with herbs and floral notes. In the mouth it is soft, citric and refreshing to the palate.

Pouilly-Fumé 'Domaine des Fines Caillottes' Pabiot
Brilliant, golden robe, Intense and complex nose exhaling tropical
fruits. The mouth is rich, concentrated, with a good length and a well
balanced acidity perfectly expressing the aromatic palette of tropical
fruits (especially mango and passion fruit), delicious by itself as
an aperitif. It is excellent served with most hors d'oeuvres and
appetisers, seafood, fish, and certain cheeses like goat cheese
in particular. Serve at around 10-12°C. It can be kept long after
with a slow evolution of the aromas.

This fresh, crisp Malborough New Zealand Sauvignon Blanc combines some of nature's best gooseberry and passion fruit notes.
The colour is a delightful light lime and the bouquet is full of lively gooseberry, fresh herbs and melon aromas with tropical passion fruit and citrus fruit character on the palate. This wine has great acidity and length, finishing refreshingly limey and elegant.
