Pressing of the grapes lasts approximately 3 hours with the juice settling naturally overnight. Fermentation takes around three weeks and then immediately racked and left for two months to age on the lees. The wine is then bottled with light filtration.

Being originally planted as bush vines and then on a trellis system, the vines are naturally controlled to have low yields, helping to ensure the quality of the grapes.
The grapes are harvested at 240 balling to capture the natural fruit of this variety. Fermentation is done in stainless steel tanks. The wine is then aged for a further 12 months in French oak barrels to provide the wanted structure of this wine, whilst still respecting the fruit. A minimal filtration is done before bottling.
Contains: sulphites.
