Regulating the temperature in this way slows the ripening of the grapes allowing intense complex flavours to develop. Chardonnay is the most popular plant, and wines can be simply region labelled, or may be harvested by smaller growers and vineyard labelled. The use of strong Oak is popular and full-bodied, intense rich citrus and ripe peach notes are characteristic.
