The South African wine industry began to open up following the privatisation of the state-controlled wine making cooperative in 1997. The best wine making regions are found on and around the coastline of the Cape. They should have a hot climate but are subject to cooling influences such as the Southern Ocean and prominent mountain ranges.
Stellenbosch is the most important fine wine producing district. White and red is produced equally, although plantings of indigenous grape varieties are decreasing.
