Misty Cove is a family owned and operated boutique wine producer, based in the Marlborough region of New Zealand. Founded in 2008, Andrew Bailey and his family oversee the vineyard and wine-making process, to ensure every bottle of Misty Cove is lovingly hand crafted.
Marlborough is located on the north eastern corner of the South Island of New Zealand, and is one of the sunniest and driest regions of New Zealand. We have a fantastic number of sunshine hours per year, however our climate is relatively cool, with an average daily temperature during summer of 24°C with clear cool evenings. The large temperature fluctuation between day and night creates a slow and flavour-intensifying ripening period, allowing our fruit to retain a fresh and vibrant acidity.
Misty Cove’s fruit is sourced from strategically positioned sites in the Wairau Valley, Rapaura and the Omaka Valley regions - renowned for exceptional vines. Our particular focus is on sub-regional differences to give us the best blending possibilities. In short; we take the best environmental ingredients available, and utilise them to make some very special wines.
The fruit for the Sauvignon Blanc was grown at the upper Wairau, Waihopai and Rapaura vineyards. Each vineyard site was treated individually to ensure integrity of the vineyard and to retain the individual characters each site has to offer as well as providing the best blending possibilities.
The fruit was crushed, gently pressed and the resulting juice was then settled before being cool fermented in stainless steel using different yeasts to add complexity. The wines were then blended and balanced shortly after completing fermentation and prepared for bottling.
The colour is a delightful light lime and the bouquet is full of lively gooseberry, fresh herbs and melon aromas with tropical passion fruit and citrus fruit character on the palate. This wine has great acidity and length, finishing refreshingly limey and elegant.
