Six generations of the Bonfils family have devoted their life to winegrowing. From Algeria to Languedoc via Roussillon, three generations currently work hand in hand.
Joseph Bonfils was forced into exile in Algeria in 1870 where he met his future wife Honorine Dorveaux. It was Honorine who launched the agricultural farm in the Oran region with numerous vines. She planted relentlessly, without knowing that she was growing the Bonfils' heritage.
In 1875, Honorine became one of the first women to be awarded the Mérite Agricole medal
The Bonfils family has dedicated its life to the vine for six generations. From Algeria to the Languedoc, by way of Roussillon, there are now 3 generations working hand in hand.
The vineyard took place in the old bed of the Aude, on a single and unique terroir of gravel and clay sands dating from the Quaternary era.
The grapes are harvested by night when the temperatures are at their coolest. All through the vinification process, the grapes and juice are protected against oxydation. The grapes macerate on the skins before pneumatic pressing. Then follows a slight cold settling. The fermentation is kept slow in thermo-regulated stainless steel vats. The wine is aged on fine lees in small stainless steel tanks with regular stirring of the lees.

Prettily pale yellow in colour with bright reflections. The powerful nose offers aromas of acacia blossom, exotic fruits and white fruits. Supple and full-bodied, the palate reveals notes of citrus fruits, melon and white fruits with a remarkable balance between freshness and smooth richness.

Brilliant light gold in colour, with powerful and intense aromas of boxwood, citrus fruits (grapefruit) and exotic fruits. Smooth on the palate with good vivacity developing an agreeable aromatic intensity.

The vineyard took place in the old bed of the Aude, on a single and unique terroir of gravel and clay sands dating from the Quaternary era.
The grapes are destemmed. After a short cold maceration (5 days at 8°), fermentation is held at 22°. Slow extraction with racking of the must and punching of the cap. After going through the pneumatic press, free run juices are blended to a selection of press juices for malolactic fermentation in stainless steel vats. Then the wine matures in tanks on fine lees with micro bubbling.

A deep purple Merlot with brilliant reflections. The nose evokes small, ripe red and black fruits such as raspberry, blackberry or blackcurrant, enhanced by a hint of spices and garrigue. The palate is round, offering a rich and silky texture thanks to well integrated tannins.
