The terroir, mainly clay-limestone and bathed by the warm Mediterranean climate, allows optimal ripening of the grapes.

Vinification

The Chardonnay, harvested overripe, undergoes skin maceration for 6 to 12 hours before being pressed in a pneumatic press. During the entire development phase, the harvest, the must and the wine are all protected from oxidation. The vinification takes place at controlled temperatures around 16 ° C, and the wine is then aged on fine lees.

Winemaker's Notes

Beautiful straw yellow color with green reflections. Complex and very intense nose where flavors of citrus, peaches, apricot, and dried fruits are added to vanilla and floral notes. The palate is full-bodied and harmonious, with a lot of roundness and exceptional volume. It will work wonders around 12 ° C, as an aperitif, with fish, poultry in white sauce or goat cheese.

Vinification

Traditional vinification with particular attention being brought to the state of maturity of the vintage. Malolactic fermentation in French oak barrels selected to round off the tannins of the wine. Aged for 10 months in oak barrels.

Winemaker's Notes

Slightly spicy on the nose with hints of strawberry and blueberry. Round and concentrated in the mouth with lots of ripe fruit flavours coming through. A good balance of pleasant sweetness and integrated oak.
