Gabriel Jambon has his Domaine in Beaujolais, with 11 of the 18 hectares within AOC Brouilly. Picking is done manually and the vinification takes place in the wine store on site, according to the method of Beaujolais. The wines are then produced in the cellar where they are stored in tanks and barrels. Next spring they are then bottled on the property.
